So many reasons to celebrate! Life, friends, family, opportunities, success and.... My pup Coco's birthday! So I thought what a great excuse to bake a cake! I also just so happened had 4 over-ripe bananas sitting on my kitchen counter so I decided to do (no not banana bread or banana muffins or cupcakes) ........ ----->
Banana chocolate chip birthday cake! :P
What you need:
-1 1/2 cups bananas, mashed
-2 tsps lemon juics
-3 cups flour
-1 1/2 tsps baking soda
-1/4 tsp salt
-3/4 cup butter softened
- about 2 cups of sugar (2 and 1/8)
- 3 large eggs
-2 tsps vanilla
-1 1/2 cups buttermilk (if you dont have butter milk, add some lemon to milk and you'll be fine :P)
Topping- Brown sugar and cinnamon
What to do!
Preheat oven 275F (yes 275!)
Grease and flour a 9x13 pan
In a small bowl, mash bananas with the lemon juice, set aside.
In a medium bowl, mix flour, baking soda, and salt, set aside
In a large bowl, cream butter and sugar until light and fluffy. Then, beat in the eggs one at a time.
Stir in vanilla. Beat in the flour mixture alternately with the buttermilk to make sure texture stays smooth.
Stir in banana mix. Fold in chocolate chips.
Mix brown sugar and cinnamon (you wanna have more sugar than cinnamon)
Pour in pan, sprinkle sugar cinnamon mix and bake for one hour/just over an hour. Keep checking at that hour point with a toothpick if it comes out clean.
Remove from oven and immediately place in the freezer for 45 minutes. This makes the cake suuuper moist! Remove from oven and cut a little slice of banana chocolate chip heaven! :)
TIP: try a cream cheese frosting or chocolate frosting on this!

All done! The cake was moist and banana-ey and the chocolate chips added a chunk bite once they cooled! Great with ice cream (perhaps cinnamon ice cream? it is a birthday after all :P)
